
It is well established
that carrots are a healthy food. They contain many important nutrients
- beta-carotene, B vitamins, vitamin C, and the minerals calcium, phosphorous,
potassium and sodium- plus other phytochemicals, such as alpha carotene.
Of all of these, it is beta-carotene that traditionally has received
